*Ingredients*

1 kilo orange peel (chopped into lengths approx. 4cm long x 0.75cm wide)

500ml water

500g sugar

Additional 100g lots of sugar as repeat the process

100g glucose

 

*Instructions*

Step 1 -

Blanch a quantity of orange peel (eg. 1 kilo) in water. Set aside.

Bring 250ml water and 250g sugar to the boil, add the blanched 1kilo of peel, let boil for 2-3 mins and set aside.

Leave the peel in the syrup overnight.

Step 2 -

The next day, drain the fruit from the syrup, retaining the syrup.

Bring this syrup to the boil, adding 100g sugar. When the syrup is boiling, add the peel, let boil for 2-3 mins and set aside.

Leave the peel in the syrup overnight, again.

Step 3 -

Repeat Step 2 as often as you like - 5-6 days for candied peel is particularly good.

Step 4 –

Drain the fruit from the syrup, retaining the syrup,

Bring this syrup to the boil, adding 100g of glucose. When the syrup is boiling, add the peel, let boil for 2-3 mins and set aside.

 

Drain the candied peel from the syrup, drain on paper towels. When completely dried, store ??where would this be stored, Khalid?
