*Ingredients:*

500g pears

500g plums or champagne rhubarb, can purchase from Portobello or 250g of each

250 caster sugar or honey

2 cinnamon sticks, never ground cinammon

2 star anise

Peel of an orange

Juice of an [orange}

 

*Instructions:*

 

First lightly poach the pears in water with sugar and lemon without boiling. Check when the pears are ready by using a skewer.

 

Method 1:

Place all ingredients (except the peel and juice of the orange) in a baking dish and bake for 20 minutes at 170C, When done, add the orange juice and orange peel.

 

Method 2:

Place the fruit in a pot with sugar and spices. Squeeze in the juice of an orange and bring to boil over a low heat (takes about 20-25 minutes)

 

Display and serve.
