marinated figs with fresh pomegranate sauce
Serves 4
*Ingredients:*
1.25 cups of red wine
1 cinnamon stick
1tbsp brown sugar
6 figs halved
Sauce:
2 large pomegranates (peeled)
¼ cup caster sugar
¼ cup red wine
1tsp lemon juice
½ cup marscapone
*Instructions:*
Combine the wine, cinnamon stick and brown sugar in a saucepan over a low heat until the sugar dissolves. Place the figs in a bowl and pour over the sugar syrup. Cover and stand, at room temperature.
Place 1.25 pomegranates in a food processor with the caster sugar and a little wine, and blend until smooth. Put through a sieve and stir the lemon juice through the strained sauce. Drain the figs and char grill the cut side until brown. Pour the sauce onto each dessert plate, arrange and serve with the marscapone and remaining reserved pomegranate pulp.
