moroccan glazed carrot salad

Serves 4

 

*Ingredients:*

4 large carrots

6tbsp olive oil

4tsp white vinegar

3tsp paprika

½tsp chilli powder

1tsp salt

2tbsp chopped flat leaf parsley

3tsp icing sugar (optional)

 

*Instructions:*

Peel the carrots and cut in 8 portions around 1cm thick. Cook in boiling water for 10mins, then plunge them into cold water to stop them cooking, then drain and dry.

 

Put the rest of the ingredients into a mixing bowl, mix them well until you have a honey consistency. Add the carrots and stir to glaze.
