moroccan pancakes with honey and pistachios

Makes 12

 

*Ingredients:*

125grams fine semolina

50 plain flour

½ tsp salt

100ml milk

250ml water

1 egg, lightly whisked

15g dried yeast mixed with 1tbsp water

butter and honey to serve

crushed pistachios

 

*Instructions:*

Put the semolina and flour into a bowl, add the salt. Warm the milk and water over low heat (do not boil), add the egg and yeast. Pour onto the semolina/flour, mix gently for 10 minutes until a soft batter. Pass the mixture through a fine sieve. Cover and leave to prove in a warm place until you have a frothy appearance.

 

Take a frying pan and heat (high). Pour around a half ladles full of mixture, using the b ack of the ladle to spread. Cook until bubbles appear on the surface, cook only one side.

 

Heat some butter and honey in a pan adding the pistachios, pour over pancakes.
