vegetable cous-cous

 

*Ingredients:*

4 carrots

2 courgettes

2 turnips

1 slice of pumpkin

2 tomatoes

2 celery sticks

2 onions

1 tin of boiled chick peas

4tbsp olive oil

vegetable stock

2tsp ground ginger

salt / pepper to taste

pinch saffron

1 cinnamon stick

500gm cous-cous

 

*Instructions:*

Use a large sized pot half-filled with water, chop all the vegetables, bring to the boil. Add the olive oil and spices. Leave to cook until the vegetables are tender. Add vegetable stock. At the very end, add your chick peas.

 

Prepare cous-cous traditionally as per the demonstration and advice given during class.
